Duck Crostini
Serves 4-6
Ingredients:
2 lbs Duck Breast
20-24 Crostini Slices
Organic Spinach Leaves
Tomato Chutney (just Google the recipe, I am too tired to walk you the whole silly thing)
Score the duck breast in cross pattern on fatty side without cutting into the meat
Place the duck breast in a cast iron skillet on medium high heat fat side down to render the fat
Finish the duck in the oven until the temperature is 140 F / 60 C
Let the duck rest while you toast up the crostini.
Slice and serve the duck breast on the crostini slices topped with 2 raw spinach leaves and a teaspoon of warmed tomato chutney.
If you screw the duck up serve everyone ice cream and challenge them to do any better. Ungrateful deadbeats that they are.
